Winter Dried Fruit Compote with EasiYo

Ingredients

  • 1 ½ cups dried fruit (apricots, dates, prunes, cranberries, fig, mango etc) 
  • 1 ½ cups water
  • 1 cinnamon stick
  • 1 star anise
  • 2 tablespoons honey

Cereal biscuit

  • 2 egg whites
  • 1 tablespoon caster sugar
  • a pinch of cinnamon
  • 1 ½ cups of your favourite toasted muesli 

Method

This spiced compote is lovely spooned warm onto yogurt for dessert too!

For the compote simmer 1 ½ cups dried fruit (apricots, dates, prunes, cranberries, fig, mango etc) With 1 ½ cups water, 1 cinnamon stick, 1 star anise, 2 tablespoons honey and a piece of orange peel Until glossy and syrupy. Store in a jar refrigerated for up to 2 weeks.

For the cereal biscuits simply place 2 egg whites in a large bowl with 1 tablespoon caster sugar and a pinch of cinnamon and whisk until white and foamy, stir in 1 ½ cups of your favourite toasted muesli and mix until well coated, place spoonful’s on a lined baking tray and spread out into even circles with the back of a spoon.

Bake at 170 degrees celcius for 8-12 minutes or until golden. Let cool and set then store in an air tight container for up to a week.

Variations/Comments

Serve your favourite EasiYo yogurt with a good spoonful of marinated spiced fruits and a cereal biscuit on the side.

  • the biscuits make great after school snacks with a little bowl of EasiYo for dipping!
