Versatile Bread

Ingredients

  • 3.2 kg strong flour
  • 1.25L EasiYo yogurt
  • 1L warm water
  • 70g fast acting yeast
  • 50g sugar
  • 10g salt

Method

Mix together the EasiYo yogurt and water until all combined.

 Add the sugar and yeast to the yogurt/water and stir until smooth.

Leave in a warm place for about 20 mins until the yeast starts to froth up.

In a large mixing bowl sieve together the flour and salt.

After the yeast has started to ferment add the wet to the dry and mix on a medium setting until the dough has come away from the sides and has an elastic touch.

Tip out the dough and oil the bowl.

Just mixed the dough in and return the dough, cover with cling film and leave to rise in a warm place, this can take between 30 mins to 1 hour depending on the heat in the kitchen.

When doubled in size turn out onto a floured surface and knock back the dough.

Size up the dough into 1kg loaves and place onto a lightly floured baking tray.

Slash the top 3 times and lightly dust with flour, continue to do this until all the dough has been used up (6 loaves I usually make).

Cover with a tea towel for 30 mins then place in a pre-heated over 180C for 20-30 mins depending on the type of crust you require.

Cool on a cooling rack until completely cool.

Makes: 6 x 2lb loaves of the most amazing bread, it also makes 120 slider buns that are moist.

Flavoured bread makes 7 x 2lb loaves

Variations:  Add caramelised chilli, onion and cheese for a variation
