EasiYo Foodservice Cheesecake

Ingredients

Biscuit base

  • 1.25kg of plain or digestive biscuits
  • 390g melted butter

Cheesecake filling

  • EasiYo Foodservice Cheesecake 1.3kg Sachet
  • 3.25kg plain, unsweetened EasiYo Yogurt

Method

Biscuit base

Crush the biscuits.

Add melted butter and stir well.

Press mixture into the base of a greased 65mm deep Gastronorm 1/1 dish OR 6 x 20cm round tins.

Chill for 20 minutes to set.

Cheesecake filling

Add the cheesecake filling mix to yogurt in a 15 Lt mixing bowl.

Stir lightly with a spatula to remove lumps then mix with an electric mixer at low speed for 30 seconds.

Scrape the sides and bottom of the mixing bowl to ensure it is thoroughly blended. Whisk on high speed for 2 minutes.

Immediately pour the cheesecake filling mix onto the prepared biscuit base, flattening and levelling it with the back of a spoon.

Chill for 2 hours before serving. Top with EasiYo Fruit Squirt Topping, fruit and nuts or chocolate if desired.
