Baked Family Style Muesli with EasiYo Greek Style Rhubarb


  • 2 ½ cups of your favourite muesli cereal
  • ¼ cup chopped almonds or pecans
  • ½ teaspoon cinnamon
  • ½ cup brown sugar
  • 2 eggs
  • 2 cups milk
  • 200g chopped rhubarb
  • 1/2 cup caster sugar
  • 1/4 cup water
  • 1 tbsp frozen raspberries
  • EasiYo Greek Style Rhubarb yogurt


This makes a great weekend breakfast before a busy sports or shopping day!

Pre-heat the oven to 180°C.

In a large bowl combine the cereal with the chopped nuts, cinnamon and brown sugar. Whisk the eggs and milk and pour into the dry ingredients, mixing well. Transfer into an oven proof serving dish and bake for 20-25 minutes until golden and just set.

Simmer the rhubarb with the sugar, water and raspberries until syrupy and soft. Serve the baked muesli with the rhubarb yogurt and swirl through the stewed rhubarb.


This warm baked breakfast is delicious serve with EasiYo Strawberries & Cream yogurt and sliced strawberries when in season or try EasiYo Toffee yogurt with stewed prunes or EasiYo Cranberries & Bits with Mixed Berry Topping.
