Yogurt Raita

Ingredients

  • 50g cucumber
  • 1 clove garlic, crushed
  • 1T chopped chives
  • 1T coriander
  • 3 large mint leaves, chopped
  • 2t lemon juice
  • ½c EasiYo Greek Style yogurt
  • Drizzle of Olive Oil
  • Salt and pepper

Method

Peel the cucumber and remove the seeds.  Grate with a fine grater and squeeze the cucumber in your hand to remove the excess water.  Mix all remaining ingredients together.  Refrigerate until needed.  Drizzle with olive oil to serve.
