Baked Family Style Muesli with EasiYo Greek Style Rhubarb

Ingredients

  • 2 ½ cups of your favourite muesli cereal
  • ¼ cup chopped almonds or pecans
  • ½ tsp cinnamon
  • ½ cup brown sugar
  • 2 eggs
  • 2 cups milk
  • 200g chopped rhubarb
  • 1/2 cup caster sugar
  • 1/4 cup water
  • 1 Tbsp frozen raspberries
  • EasiYo Greek Style Unsweetened yogurt

Method

This makes a great weekend breakfast before a busy sports or shopping day!

Pre-heat the oven to 180°C.

In a large bowl combine the cereal with the chopped nuts, cinnamon and brown sugar. Whisk the eggs and milk and pour into the dry ingredients, mixing well. Transfer into an oven proof serving dish and bake for 20-25 minutes until golden and just set.

Simmer the rhubarb with the sugar, water and raspberries until syrupy and soft. Serve the baked muesli with the yogurt and swirl through the stewed rhubarb.

Variations/Comments

This warm baked breakfast is delicious serve with EasiYo Strawberry flavour Yogurt and sliced strawberries when in season.
